Ingredients

  • Chicken Wings Ingredients
  • 2 pounds chicken wings (drumette and wingette attached)
  • Kosher salt
  • ½ teaspoon granulated garlic
  • ½ teaspoon smoked paprika
  • 1 teaspoon fresh oregano, chopped
  • 1 teaspoon fresh rosemary, chopped
  • ½ red bell pepper, sliced ¼ inch thick
  • ½ yellow bell pepper, sliced ¼ inch thick
  • ½ green bell pepper, sliced ¼ inch thick
  • 1 medium red onion, sliced in half-moons
  • 10 garlic cloves, sliced

  • BBQ Sauce Ingredients
  • 1 cup ketchup
  • ¼ cup plus 1 tablespoon apricot preserve
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons spicy brown mustard
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons adobo sauce

Instructions

Preheat the oven to 350 degrees. Heat a medium saucepan over medium-high heat and add the BBQ sauce ingredients to the pan and stir to combine. Bring the sauce up to a boil and take off the heat, and set aside. With your kitchen shears, carefully cut the chicken wings in half at the knuckle, removing the drumette from the wingette. Place them in your roasting pan or dish and season with salt, granulated garlic, smoked paprika, oregano, and rosemary. Add the bell peppers, onions, and garlic on top and bake in the oven for about 45 minutes. Do not use any butter or oil so that the wings get crispy. After 45 minutes, sauce the wings and vegetables with the bbq sauce and roast again for another 45 minutes or until tender and caramelized. Remove the wings from the oven and serve.
