Smashed Sweet Potatoes Recipe
Chef JJ’s smashed sweet potatoes are creamy, sweet, and crunchy.
Ingredients
- 5 large sweet potatoes , skin on
- ½ - ¾ cup warm cream or milk
- Splash bourbon
- 4 tablespoons butter, softened
- 1 teaspoon molasses
- ½ cup peanuts
Instructions
Wrap the sweet potatoes individually in foil and roast in the oven at 350 degrees until fork-tender. Once the potatoes are cool enough to handle, peel the skin off and place into a large bowl. Add the cream or milk, bourbon, butter, and molasses and mash all together with a potato masher. Fold in the peanuts and serve.
