Ingredients
- Caribbean Island Fire Roasted Hot Wings
- 3 pounds chicken wings
- 1 cup hot sauce
- 1 tablespoon butter
- 1⁄2 cup of pineapple juice with crushed pineapples
- ¼ teaspoon cayenne pepper
- 1 teaspoon of chili powder
- 2 tablespoons brown sugar
- ¼ teaspoon pepper
- Salt to taste
- Pepper to taste
- Blue cheese salad dressing

- Creamy Bleu Cheese Dressing
- 1⁄3 cup mayonnaise
- 1⁄3 cup sour cream
- 1 tablespoon lemon juice
- 1⁄4 cup heavy cream
- 1 sprig of fresh dill
- 1⁄2 cup blue cheese, crumbled
- Salt to taste
- Pepper to taste
Instructions
Caribbean Island Fire Roasted Hot Wings
- Cut chicken wings into three sections; discard wing tip sections and season with salt and
- Preheat the oven to 375 degrees, and using a tray lined with a roasting rack, roast chicken wings in the oven for 45 minutes, until slightly crispy.
- In a small wok, combine hot sauce, butter, pineapple & juice, cayenne, chili powder, brown sugar and pepper. Simmer until the sauce starts to bubble.
- Remove wings from the oven and transfer to the wok with boiling sauce and toss for 2-3
- Once the wings are well-coated serve with a garnish of minced green onions and blue cheese dipping sauce.
Creamy Bleu Cheese Dressing
- Combine the mayonnaise, sour cream, lemon juice, heavy cream, dill, half of the bleu cheese, salt, and pepper in food processor or blender. Process until well combined.
- Pour into a medium bowl and stir in the remaining bleu cheese.
