Ingredients

  • Caribbean Island Fire Roasted Hot Wings
  • 3 pounds chicken wings
  • 1 cup hot sauce
  • 1 tablespoon butter
  • 1⁄2 cup of pineapple juice with crushed pineapples
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon of chili powder
  • 2 tablespoons brown sugar
  • ¼ teaspoon pepper
  • Salt to taste
  • Pepper to taste
  • Blue cheese salad dressing
  • --
  • Creamy Bleu Cheese Dressing
  • 1⁄3 cup mayonnaise
  • 1⁄3 cup sour cream
  • 1 tablespoon lemon juice
  • 1⁄4 cup heavy cream
  • 1 sprig of fresh dill
  • 1⁄2 cup blue cheese, crumbled
  • Salt to taste
  • Pepper to taste

Instructions

Caribbean Island Fire Roasted Hot Wings

 
  1. Cut chicken wings into three sections; discard wing tip sections and season with salt and
  2. Preheat the oven to 375 degrees, and using a tray lined with a roasting rack, roast chicken wings in the oven for 45 minutes, until slightly crispy.
  3. In a small wok, combine hot sauce, butter, pineapple & juice, cayenne, chili powder, brown sugar and pepper. Simmer until the sauce starts to bubble.
  4. Remove wings from the oven and transfer to the wok with boiling sauce and toss for 2-3
  5. Once the wings are well-coated serve with a garnish of minced green onions and blue cheese dipping sauce.

Creamy Bleu Cheese Dressing

 
  1. Combine the mayonnaise, sour cream, lemon juice, heavy cream, dill, half of the bleu cheese, salt, and pepper in food processor or blender. Process until well combined.
  2. Pour into a medium bowl and stir in the remaining bleu cheese.
