Aunt Jeannie’s Fried Chicken Recipe

Ingredients
- Oil for frying
- 1 pound chicken wings and drumsticks
- 1 tablespoon all-purpose seasoning (cayenne, thyme, onion powder, garlic powder)
- 1 teaspoon paprika
- Kosher salt
- 1 egg
- 1 cup of coconut milk
- 1 cup of rice flour
- 1 cup all-purpose flour
Instructions
Heat oil in a large Dutch oven or heavy bottom saucepot over medium-high heat until it reaches 350 degrees. In a large bowl mix the chicken wings and drums with all-purpose seasoning, paprika, salt, egg, and coconut milk. Mix the rice flour and all-purpose flour in a separate large mixing bowl. Coat the chicken pieces thoroughly in the flour mixture and then fry in the oil until golden brown and crispy. Drain excess oil on a sheet tray with attached cooling rack or a plate lined with paper towel. Serve the fried chicken with Deep Dish French Toast and maple syrup.
