A cast iron skillet filled with a sizzling dish of grilled salmon, bell peppers, and onions.

Instructions

Ingredients:

  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 lemon
  • 1 large white onion, sliced
  • 2 lbs. of salmon (whole or cut into portions)
  • Salt (to taste)
  • Pepper to taste
  • 1/2 tbs onion powder
  • 1/2 tbs garlic powder
  • 2 tsp seafood seasoning
  • 2 tbsp olive oil or avocado oil
  • 2 tbsp of butter
  • Pinch of cayenne pepper

Method:

  1. Preheat the oven to 350 degrees.
  2. Using a large cast-iron skillet coated with 1 tbsp of olive oil or avocado oil, along with the butter. Over medium-high heat, add the sliced peppers and onions and cook until soft,about 2-3 minutes, then remove from the heat.
  3. Next, place another large cast-iron skillet, coated with olive oil or avocado oil, over medium-high heat. While the pan is heating, season the salmon.
  4. Lay your salmon onto a sheet pan. Coat the salmon with olive oil or avocado oil, then season with salt, pepper, onion powder, garlic powder, and seafood seasoning, making sure all ingredients stick to the salmon. Squeeze the juice of 1/2 a lemon on top of the salmon.
  5. Next, place the seasoned salmon in the hot cast-iron skillet, skin side down, and cook for one to two minutes.
  6. Next, place the sauteed onions and Peppers on top of the salmon, add salt, pepper, garlic powder, onion powder, and cayenne. Then place the salmon into the oven and bake for 20-25 minutes.
