• Avocado oil or butter
  • 2 pounds ground lamb
  • 1/3 cup breadcrumbs
  • ¼ cup milk
  • 1 tablespoons EssieSpice Coco-for -garlic sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 2 cloves garlic, minced or 1 teaspoon minced garlic
  • Salt to taste
  • Black pepper


Preparation of Dressing

1.In a small bowl, add honey, yogurt and 1 tablespoon of EssieSpice CFG

2.Add dried sage and a pinch of salt to mixture and mix all together and set aside

Preparation of Burger

1.In a medium bowl mix the ground lamb, breadcrumbs, milk, EssieSpice Coco-for-garlic sauce, rosemary, garlic and salt, pepper. 2.Heat a large cast iron pan over medium high heat. Drizzle with olive oil. Form the patties into 4 to 5 flat rounds that are the size of your pita pocket. Place the patties in the pan and sear on each side until golden brown. Cook to desired internal temperature. Remove from the pan and allow to rest for a few minutes. 3.Heat a griddle on high heat.Add the oil or butter and place the sliced pita onto toast. 4.To assemble, spread the yogurt dressing on each inside layer of the pita, place the burger on bottom layer then add caramelized onions on top, feta cheese, black olives, slices of heirloom tomato, lettuce, and optional slices of onion.
