Ingredients

  • Grits Ingredients
  • 2-3 cups chicken stock
  • 1 tablespoon butter
  • 1 cup stone ground grits
  • 1⁄4 cup smoked cheddar cheese + more for grating
  • .
  • Shrimp Ingredients
  • Olive oil
  • 2 tablespoons butter
  • 1⁄2 green bell pepper, medium dice
  • 1⁄2 red bell pepper, medium dice
  • 1 small vidalia onion, small dice
  • 1-2 links of your favorite bbq sausage, sliced
  • Kosher salt
  • Black pepper
  • 1 pound large shrimp, peeled and deveined (leave tails on)
  • 1 1⁄2 teaspoons smoked paprika
  • 1 1⁄2 teaspoons Cajun seasoning
  • 1 cup of your favorite smokey whiskey bbq sauce
  • Parmesan cheese or smoked cheddar cheese for grating

Instructions

First make the grits so they are ready once your shrimp are done. In a medium saucepan add the chicken stock and butter and bring up to a boil over medium high heat. Add the grits in a steady stream and whisk quickly. Turn the heat down to medium low and cook the grits until tender and creamy. Add more liquid if needed and fold in the smoked cheddar cheese. In a medium saute pan over medium high heat add a drizzle of olive oil and the butter. Once the butter is melted add the peppers and onion and begin to saute. Season with salt and pepper as desired. Add the sausage and stir to combine.
Season the shrimp on each side with the smoked paprika and Cajun seasoning. Make room in the pan to add the shrimp and nestle them into the peppers, onion, and sausage mixture. Cook the shrimp on one side until pink then flip the shrimp over to finish cooking on the other side. At this point add in the BBQ sauce and simmer for 1-2 minutes. Plate a nice mound of grits in a bowl, grate parmesan or smoked cheddar cheese over top (whichever you prefer), and spoon the BBQ shrimp and sausage sauce over top. Eat right away and enjoy!
