  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 eggs
  • ½ cup American cheese, shredded
  • 1 ½ cups extra sharp cheddar plus more for top
  • 1 cup Colby jack plus more for top
  • 1 cup Gruyere cheese
  • 2 cups mozzarella
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Kosher salt
  • Cracked black pepper
  • 2 pounds ground turkey
  • All-purpose seasoning
  • BBQ sauce
  • 4 pretzel buns

Instructions

Preheat the oven to 350 degrees. In a large mixing bowl, mix together the pasta and butter until well combined. Add the milk, heavy cream, eggs, American cheese, extra sharp cheddar, Colby jack, Gruyere, mozzarella, onion powder, garlic powder, salt, and pepper to a large bowl and mix thoroughly to combine. Pour the mixture into a 9x13 inch baking dish and cover with foil. Bake the mac and cheese in the oven for about 40 minutes. Allow the mac and cheese to cool completely before stuffing into the ground turkey. Mix the all-purpose seasoning, salt, cracked black pepper, and turkey meat together in a large bowl. Divide the ground turkey into equal patties. Form the burgers in the palm of your hand create a well in the center. Add two tablespoons of the mac and cheese. Form the turkey around the mac and cheese, sealing it to form a burger patty. In a large saute pan or cast-iron skillet, heat the olive oil until it starts smoking. You want the pan to be very hot to create good caramelization on the patties. Add in the burgers and cook all the way through, making sure they are golden brown on each side. Some of the cheese may start oozing out, and that's ok. Brush each inside half of the pretzel bun with bbq sauce and place each burger patty on the bottom bun closing with the top bun. Cut in half or eat whole.
