BBQ Vegetarian Burger Sliders with Brussel Sprout Slaw

  • 1 pound vegan beef
  • 6 garlic cloves, roughly chopped
  • ½ cup bbq sauce, divided
  • 8 Hawaiian buns
  • .
  • BBQ seasoning
  • 2 tablespoons brown sugar
  • 3 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons dried oregano
  • .
  • Brussel Sprout Slaw
  • 1 cup mayo
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon yellow mustard
  • 1 tablespoon relish
  • 2 cups shaved brussel spouts on mandolin
  • 2 medium carrots sliced on mandolin
  • .


In a medium bowl mix together the vegan beef and garlic cloves. In another small bowl whisk together the bbq spices. Add half of the mixture into the meat and garlic. And save the rest for the slaw. Then add half of the bbq sauce. Mix the meat mixture together making sure to combine the spices and the bbq sauce. Heat a griddle over high heat and form the meat mixture into mini patties. Oil the griddle and place the patties on and cook until golden brown on each side. Set them aside on a rack to rest and sprinkle with a little salt and black pepper. Make the slaw: whisk the mayo, apple cider vinegar, mustard, relish, and half of the bbq sauce (optional) together in a large bowl. Add in the brussel sprouts and carrots and sprinkle with a few pinches of the bbq seasoning. Assemble the burger on a Hawaiian bun and top with the slaw.
