Boozey Mixed Berry Compote over Vanilla Ice Cream | Just Eats with Chef JJ

Ingredients
- 11⁄2 pounds (4 boxes) mixed berries, strawberries, blueberries, raspberries and/ or blackberries (about 5- 6 cups)
- 1⁄4 teaspoon ground cinnamon
- 4 to 6 tablespoons granulated sugar, to taste
- 2 teaspoons fresh lemon or lime juice
- 1⁄2 teaspoon rose water
- 1⁄4 cup Bourbon
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- 1 quart vanilla ice cream
Instructions
- Combine all ingredients except the cornstarch dissolved in water in a saucepan. Add 1 tablespoon water and bring to a simmer over medium heat. Simmer until the berries release their juices and the blackberries and raspberries begin to break apart, about 10 minutes. Stir occasionally from time to time.
- Stir in dissolved cornstarch and stir until mixture thickens. Remove from the heat and allow to cool, or serve warm, spooned over ice cream.
