Brown Rice Waffles

Ingredients
- 2 cups whole-grain brown rice flour
- 1⁄2 cup tapioca starch or cornstarch
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon kosher salt (preferably Diamond Crystal)
- 1 cup buttermilk
- 1⁄4 cup water
- About 1⁄4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 2 large eggs
- 1⁄2 cup cooked brown rice

- For Serving:
- Butter (optional)
- Maple syrup
- Fresh fruit, such as strawberries, blueberries, sliced bananas, or sliced kiwis

Instructions
Preheat a waffle iron. Combine the brown rice flour, tapioca starch, sugar, baking powder, baking soda, and salt in a large bowl and whisk together to blend. In a medium bowl, whisk together the buttermilk, water, 2 tablespoons of the coconut oil, the vanilla extract, and eggs. Add the wet mixture to the dry mixture and whisk to blend all the ingredients into a thick batter. (If the batter seems too thick, add more water 1 tablespoon at a time to loosen it.) Stir in the cooked brown rice, breaking up any clumps with your hands as you add it. Brush the hot waffle iron with melted coconut oil. Pour about 1⁄2 cup batter (depending on the size of the waffle maker) onto the hot iron and gently spread it out with a heatproof spatula to cover the griddle. Cook according to the manufacturer’s instructions, then transfer to a plate and serve as they are made, or keep warm in a low oven. Repeat the process until all the batter has been used. Serve the warm waffles topped with a pat of butter, if desired, and with maple syrup and fresh fruit.
