Cavatappi Pasta Salad with Chicken & Shrimp

Instructions

Ingredients:

  • 1 pound cavatappi pasta
  • 1 cup Mayonnaise
  • 1½-2 tablespoons agave
  • 2 tablespoons apple cider vinegar
  • 1 red bell pepper, medium diced
  • 1 green bell pepper, medium diced
  • 2 large celery ribs, small diced
  • 2 medium carrots, julienned
  • 1 cup small broccoli florets
  • 1 red onion, small diced
  • 2 teaspoons smoked paprika
  • 1 tablespoon dry mustard
  • 1 teaspoon seasoning salt
  • Cracked black pepper
  • Kosher salt
  • ¼ cup sliced green onion for garnish

Ingredients for Sauteed Chicken and Shrimp:

  • 3 cups of chicken breast cut into chunks
  • 1 pound medium shrimp
  • 2 teaspoons seasoning salt
  • 2 teaspoons of jerk seasoning
  • 2 tablespoons of olive oil
  • 1 teaspoon of black pepper
  • ½ teaspoon of seasoning salt

Method:

  1. Bring a large pot of water to a boil. Cook the pasta according to the package directions until al dente. Drain and set aside to cool completely.
  2. In a large bowl with the pasta, whisk together the mayonnaise, agave, vinegar, red bell pepper, green bell pepper, celery ribs, carrots, broccoli, red onion, smoked paprika, tablespoon dry mustard, seasoning salt, black pepper, salt, dry mustard, smoked paprika. Mix well and set in the refrigerator to chill.
  3. In two separate bowls season chicken and shrimp with seasoning salt, jerk seasoning, salt, and pepper.
  4. Next, place a large skillet coated with olive oil over medium high heat. Add the seasoned chicken to the pan and cook for 3 minutes, when chicken is almost done add in the seasoned shrimp and cook for 3-4 minutes, making sure both are completely cooked. Remove from the heat. Next, add the shrimp and chicken to the pasta salad. Mix well, garnish with green onions and serve.
