Chicken A La King Over Toast

Instructions

For Chicken a la King over Toast:
  • 2 Tbs Olive Oil
  • 4 Tbs Butter
  • 1 small green pepper diced
  • 1 medium onion diced
  • ½ cup AP flour
  • ½ tsp Salt
  • ¼ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp seasoning salt
  • 1 ½ cups of heavy whipping cream
  • 2 tsp of chicken bouillon powder
  • 4 slices of toasted white bread
  • 3 lbs. of boneless skinless chicken thighs
  • 2 cups of frozen mixed vegetables
  • ½ tsp cayenne pepper
Method:
  1. Place skillet coated with olive oil over medium high heat. Season chicken with salt, pepper, cayenne pepper, onion powder, and seasoning salt. Pace thighs in the pan and cook for 3-4 minutes on each side. Remove chicken from pan and set aside.
  2. Add chicken bouillon base to the pan and mix. Add onions and pepper to the pan and mix well until they begin to soften. (add more olive oil if needed)
  3. Add the flour and butter and mix well. Season the flour and butter mixture with salt and pepper and continue to mix.
  4. Slowly add in the heavy whipping cream and whisk until the mixture forms a creamy colored gravy. Add the mixed vegetables and the chicken thighs and allow to simmer for 4-5 minutes. Cut thighs into bite size chunks and mix well.
  5. Place toast in the toaster and set on medium; once toast is done, place on a place and cut in half. Lay chicken, vegetables, and gravy mixture on top of the toast and serve.
