  • 1 whole young chicken or 2 small Cornish hens
  • 2 lemons
  • 1/4 cup EssieSpice Coco-For -Garlic Sauce
  • 1/4 cup pure honey
  • 1/4 cup rice wine vinegar
  • 1/8 cup of water
  • 1/4 cup coconut oil
  • Sprinkle of oregano
  • Kosher salt


Preparation 1.Clean the cornish hens under cold running water with lemon. Pat dry and set aside. 2.Mix the EssieSpice Coco-For-Garlic Sauce with the honey, coconut oil, salt, water, rice wine vinegar and divide into 2. Use one part to marinade the entire chicken and leave in the fridge for 4 hours or overnight. 3.Take the other half of the marinade and simmer very slowly on low heat on the stove until 4.Preheat the oven to 350 degrees. 5.Take the chicken out of the fridge. Preheat a large cast iron skillet with coconut oil. Add the cornish hens and sear until golden brown on each side.Transfer the cornish hens to a sheet tray fitted with a rack. Place in the oven and continue to roast for about 20 to 25 minutes or until the temperature reaches 165 degrees internally in the thickest part of the hen. 6.Take the chicken out of the oven and glaze with the 2nd half of the marinade that was simmering. and cover the entire chicken on both sides.Then reduce the heat to 280Fahrenheit for an additional 30 minutes to get the chicken cooked through and through.Enjoy with a salad, couscous, rice, quinoa, yams or potatoes.
