Instructions

Ingredients:

  • 4 large ripe bananas, peeled and halved lengthwise and then halved again
  • 3 tbs of unsalted butter
  • 1/3 cup granulated sugar
  • ¼ tsp of cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp all spice
  • ½ cup aged rum
  • Pinch of salt
  • 4 scoops of store-bought vanilla ice cream

Method:

  1. Set a 10-inch sauté pan over medium heat. Add the butter to the pan until it is melted, next add in the sugar and stir until the butter and sugar start to caramelize, about 3-4 minutes.
  2. Add the cinnamon, allspice, nutmeg, and salt, and continue mixing until it begins to bubble. Drop the bananas into the mixture, making sure they are coated.
  3. Pour in the rum and allow to simmer for 2 minutes. Remove bananas from the pan and place each serving in a shallow bowl, then top each serving with a scoop of ice cream.
  4. To serve, place 2 pieces of bananas into a shallow bowl with 1 scoop of ice cream. Garnish with remaining spices.
