Instructions
Ingredients
- 6 lbs. Catfish cut into 8-ounce pieces
- 1 Large onion, sliced
- 2 cups buttermilk (in a large bowl)
- 2 quarts of vegetable oil for frying
- ½ tsp Salt (or more to taste)
- ½ tsp Cajun Seasoning
- ½ tsp Black pepper
- 1 tsp Onion powder
- 1 tsp smoked paprika
- ½ tsp Garlic Powder
Ingredients for Flour Mixture:
- 2 cups All-purpose flour
- 1 teaspoon Salt
- 1 tsp Cajun Seasoning
- ½ tsp Black pepper
- 1 tsp Onion powder
- 1 tsp Paprika
- ½ tsp Garlic Powder
Method:
- Place a large frying pan with vegetable oil ¾ full over medium-high heat and allow the oil to heat.
- Season the flour. In a large bowl or shallow dish, combine the flour with the salt, black pepper, onion powder, paprika, Cajun seasoning, and garlic powder.
- Use a whisk or fork to stir the dry ingredients until the spices are evenly distributed throughout the flour.
- Season the fish with the same dry ingredients in the flour mixture.
- Dip the fish into the buttermilk, then dip it into the seasoned flour. Place the fish into the hot oil and cook for 3-4 minutes.
- Turn the fish once it is golden brown and add the sliced onion to cook along with the fish for the final 3 - 4 minutes.
- Place fish and onions on a Sheet tray with a draining rack or paper towels to absorb excess oil. Serve while hot
