Instructions

Ingredients

  • 6 lbs. Catfish cut into 8-ounce pieces
  • 1 Large onion, sliced
  • 2 cups buttermilk (in a large bowl)
  • 2 quarts of vegetable oil for frying
  • ½ tsp Salt (or more to taste)
  • ½ tsp Cajun Seasoning
  • ½ tsp Black pepper
  • 1 tsp Onion powder
  • 1 tsp smoked paprika
  • ½ tsp Garlic Powder

Ingredients for Flour Mixture:

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 tsp Cajun Seasoning
  • ½ tsp Black pepper
  • 1 tsp Onion powder
  • 1 tsp Paprika
  • ½ tsp Garlic Powder

Method:

  1. Place a large frying pan with vegetable oil ¾ full over medium-high heat and allow the oil to heat.
  2. Season the flour. In a large bowl or shallow dish, combine the flour with the salt, black pepper, onion powder, paprika, Cajun seasoning, and garlic powder.
  3. Use a whisk or fork to stir the dry ingredients until the spices are evenly distributed throughout the flour.
  4. Season the fish with the same dry ingredients in the flour mixture.
  5. Dip the fish into the buttermilk, then dip it into the seasoned flour. Place the fish into the hot oil and cook for 3-4 minutes.
  6. Turn the fish once it is golden brown and add the sliced onion to cook along with the fish for the final 3 - 4 minutes.
  7. Place fish and onions on a Sheet tray with a draining rack or paper towels to absorb excess oil. Serve while hot
