Chef Essie makes a delicious dark and stormy ginger beer drink. Check out the recipe below. Plus, add this drink recipe to her seafood okra soup recipe.


  • 2 cups of ginger beer
  • 1/4 cup juice from fresh ground ginger
  • 1/2 cup cranberry juice
  • 1/2 cup apple juice
  • 1 cup lemonade
  • 3 tablespoons EssieSpice TamarindOH! sauce
  • 1 stick of cinnamon
  • 2-star anise
  • 4 sticks of grains of Selim
  • 4 cloves
  • Rum
  • Lemon and lime slices for garnish


  1. Roast all spices in a hot pan until you start to smell and see a bit of oil.
  2. Mix all liquid ingredients and add the spices.
  3. Strain spices from the mixture and pour into serving jar/jug.
  4. Add lemon/lime slices and ice as needed.
  5. Add rum to kick the cocktail up a notch.
