Grilled Plantains Foster Recipe

Jazz’s sweet grilled plantains foster is just as sweet as it is delicious!
Ingredients
- ½ stick of salted butter
- 1 cup brown Sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- ½ cup whiskey
- ¼ cup walnuts, roughly chopped
- ¼ cup pecans, roughly chopped
- Pinch salt
- 4 ripe plantains cut on the bias
- Ice Cream for serving
Instructions
Preheat the grill to 350 degrees. Oil the grates on the grill with a paper towel or heat-resistant brush. In a medium saucepot or cast iron pan, add the butter, sugar, cinnamon, vanilla, and whiskey. Once the butter has melted, add in the walnuts, pecans, and a pinch of salt. Bring the mixture up to a simmer and continue cooking until it begins to thicken into a caramel. You may close the grill lid as this cooks but be sure to check after a few minutes because it will reduce quickly. Once the sauce has thickened, dip the plantains' pieces into the sauce and grill on each side until golden brown. There should be nice char marks! Top the grilled plantains with ice cream and drizzle on the caramel sauce, and serve.
