Ingredients

  • 1 ripe avocado
  • 1 tablespoon fresh lime juice, plus more if needed
  • 2 tablespoons small diced red onion
  • 11⁄2 tablespoons of finely chopped fresh cilantro leaves and stems
  • 1⁄2 jalapeno chile, small diced
  • 1⁄2 teaspoon salt, plus more to taste

Instructions

  1. Cut avocado in half and remove the pit. Scoop out the inside of the avocado and place in a medium size bowl, mash the avocado until it is smooth, add the line juice, the diced onion, chopped cilantro leaves and stems and mix.
  2. Next add he dice jalapeno pepper, and season with salt to taste, and mix until all ingredients evenly blended. Chill and serve with chips.
