Hawaiian Inspired Macaroni Salad

Ingredients
- Hawaiian Inspired Macaroni Salad
- 2 tablespoons olive oil
- ½ pound turkey bacon, medium dice
- 1 medium carrot, small dice
- 1 cup English peas
- 3 scallions sliced
- 1 pound cooked elbow pasta
- ¾ cup mayo
- 1-2 tablespoons milk
- 1 teaspoon apple cider vinegar
- 1 teaspoon granulated sugar

Instructions
Turn a large saute pan on over medium high heat. Add olive oil and begin to saute the turkey bacon. Once the turkey bacon turns golden brown after roughly 2-3 minutes add the carrot and stir. After another 2 minutes of cooking add the peas, mix, and remove from the heat to cool. In a large bowl mix together the pasta mayo, milk, and apple cider vinegar until well combined. Add more milk if needed, but you don’t want the sauce to be too runny. Fold in the cooled turkey bacon, carrot, and pea mixture along with the scallions, sugar and salt and pepper to taste. Place in the fridge until ready to eat or serve right away.
