Ingredients
- Half a medium red onion, sliced into very thin half-moon slices
- Half an English cucumber, cut into quarters lengthwise and then into 1⁄4-inch thick half-moons
- 1 medium-sized red tomato cut into 1⁄2-inch dice
- 1 teaspoon dried oregano, separated
- Juice of 1 lemon, separated
- 11⁄2 cups rough chopped Boston bibb lettuce
- 1⁄2 pound lamb shoulder, thinly sliced
- 1⁄2 pound beef ribeye steak, thinly sliced
- 1 tablespoon minced garlic
- 11⁄2 teaspoons dried oregano
- 1 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1 teaspoon kosher salt
- 1 tablespoons fresh oregano leaves
- 2 tablespoons olive oil
- Tzatziki sauce (recipe below)
- 4 pita bread rounds
- Optional: Crumbled feta cheese for topping
Instructions
- In a medium bowl, combine the red onion, cucumber, tomatoes, 1⁄2 teaspoon of dried oregano, 1⁄2 the lemon juice and bibb lettuce. Toss and set aside.
- In a bowl, combine the lamb and beef with the remaining lemon juice, garlic, dried 1⁄2 teaspoon of dried oregano, salt, black pepper and fresh oregano. Mix well to coat the meat evenly with the seasoning. Let it marinate for at least 30 minutes, but longer for more flavor.
- Heat a grill or a large skillet over medium-high heat. If you're using strips of meat, thread them onto skewers for easier grilling. Grill the meat for about 4-6 minutes per side until fully cooked and slightly charred.
- Warm the pita bread rounds on the grill or in the oven for a few minutes until they're soft and pliable.
- Spread a generous spoonful of tzatziki sauce on each pita bread round. Place a portion of the grilled meat on top of the sauce.
- Top with sliced tomatoes, cucumbers, and onions. If desired, sprinkle some crumbled feta cheese over the gyro.
- Fold the pita bread over the filling to create a gyro sandwich. You can secure it with a toothpick or wrap it in parchment paper to make it easier to handle.
- Serve your homemade gyro with your favorite side dishes, such as Greek salad, roasted potatoes, or olives. Enjoy your delicious gyro with your choice of chicken, lamb, or beef!
- Feel free to customize your gyro with additional toppings like hot sauce, Kalamata olives, or even some fresh mint leaves for extra flavor.
Tzatziki sauce:
- 1 1⁄2 cups Greek yogurt
- 1 tablespoon roughly chopped garlic
- 2 teaspoons chopped fresh dill
- 1⁄2 teaspoon fresh ground black pepper
- 1 teaspoon Kosher salt
- Juice of 1⁄2 a lemon
- In a medium bowl, combine the above ingredients and stir well. Set aside as you prepare the remainder of the gyro.
