  • Chciken Cordon Bleu Ingredients
  • 4 boneless skinless chicken breasts
  • 8 pieces of bacon
  • 4-6 pieces Swiss chese
  • 4-6 pieces of ham slices
  • Salt and pepper to taste
  • 1 tablespoon shallot, minced
  • 1 tablespoon garlic, minced
  • Olive oil
  • .
  • Honey Mustard and Tarragon Sauce Ingredients
  • 1-2 teaspoons avocado oil
  • ¼ cup wholegrain mustard
  • ¼ cup honey
  • 1 teaspoon dried tarragon
  • Salt and pepper to taste


Preheat the oven to 350 degrees F. In a large saute pan over medium-high heat, add olive oil. Once it gets hot, add the bacon and undercook slightly (it will finish cooking when stuffed in the chicken), also reserving the fat for later. Season the chicken breats with salt and pepper on each side. Then take your knife and butterfly the chicken breasts making sure not to cut the breast all the way through. There should be a seam along one side of the breast holding the halves together. Season the breasts on the inside and stuff with a piece of swiss cheese, ham slice, 2 pieces of bacon. Close the chicken and place in the same pan that you cooked the bacon in over medium-high heat. Add in shallots and garlic and cook until the chicken is seared on each side. Transfer the chicken to the oven and roast until cooked for about 30 minutes (you can use a sheet pan or an ovenproof skillet). In a medium bowl, mix the avocado oil, mustard, honey, tarragon, and salt and pepper to taste. Once the chicken is done, serve it with the Honey Mustard Tarragon Sauce drizzled over the top.
