Lavender Gin & Tonic | Just Eats with Chef JJ

Ingredients
- 1 cup fine granulated sugar
- 1⁄4 cup dried lavender (or 1⁄2 cup fresh)
- 1 ounce rose water
- 3 ounces (1/4 cup plus 2 tablespoons) gin
- 1 ounce (2 tablespoons) fresh lime juice
- 1⁄2 ounce (1 tablespoon) fresh lemon juice
- 4 ounces (1/2 cup) tonic water
- 1⁄2 ounce (1 tablespoon) *Lavender Syrup
- Lime wedge or slice
- Fresh lavender, for garnish
- Ice
Instructions
For Lavender Syrup:

Bring 3⁄4 cup water to a boil and add all the ingredients. Reduce the heat and simmer, stirring occasionally, until sugar dissolves, about 5 minutes. Let cool and strain through a sieve. Syrup will keep in the refrigerator, tightly covered in a glass jar, about 2 weeks.
- Fill a high ball glass with ice. Add the gin, lime juice, lemon juice and Lavender Syrup, then top with tonic water.
- Garnish with lime wedge or slice and a sprig of lavender.
