Lemon Chicken Orzo | Cooking Sessions with Tamar & Ms. E

Instructions
Ingredients:
- 2 tablespoons olive oil
- 6 boneless chicken thighs (skin on)
- 1 16-ounce pack of orzo
- 1/2 cup of Parmesan cheese
- 1 cup heavy whipping cream
- 2 cups chicken stock
- 2 shallots, sliced and cut in half
- 1 tsp Seasoning salt
- Salt (to taste)
- Pepper (to taste)
- 1/12 tbsp Garlic powder
- ½ tbsp Onion powder
- 1/8 tsp Cayenne pepper
- ½ tbsp Smoked paprika
- 3 fresh lemons
- ½ cup white wine
- 2 tbsp of butter
- 3 Sprigs of Thyme
- ½ tbsp Lemon Pepper Seasoning
- 1 tsp Crushed Red Pepper Flakes
Method:
- Place a cast-iron skillet over medium-high heat and coat with olive oil.
- Season the chicken with seasoning salt, black pepper, onion powder, garlic powder, and smoked paprika.
- Place the chicken in the skillet, skin-side down, for 2 to 3 minutes, until golden brown. Squeeze the juice of a fresh lemon over the chicken. Add the sliced shallots. Turn the chicken over. And cook for another 3 minutes. Remove the chicken and shallots from the pan and set aside.
- Pour the white wine into the pan and mix until all the bits of chicken and seasoning are mixed into the white wine and allow this to simmer.
- Add the orzo into the pan and mix well. Cook for 1 minute, then add 2 tablespoons of butter. And mix well.
- Next, add in the sprigs of thyme and the chicken stock. (add salt and additional dry seasoning to taste)
- Add in the heavy whipping cream and mix well. Slowly add the juice of 1/2 a lemon while rapidly whisking.
- Place the chicken back in the sauce and add1/2 cup of parmesan cheese. Mix in the lemon pepper seasoning and crushed red pepper flakes. Gently stir, making sure all ingredients are thoroughly mixed around the chicken. Add another squeeze of fresh lemon juice and put it in the oven at 350 degrees for 30-40minutes.
