Ingredients
- 1 tablespoon olive oil
- 2 pounds ground turkey
- 1/2 teaspoon of cayenne pepper
- 4 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 2 teaspoons onion powder
- 1 tablespoon oregano (fresh or dry)
- 2 bay leaves
- 2 cups coarsely chopped onions
- 2 tablespoons chopped garlic
- 1 sweet red pepper, deveined and chopped
- 1/2 cup chopped celery
- 1 serrano pepper finely chopped
- 3 cups fresh diced tomatoes
- Avocado Ranch (see recipe below)
Instructions
- Heat the oil in a large pot and add the ground turkey meat. Cook until lightly browned, about 5-6 minutes, stirring with a wooden spoon. Add in cayenne pepper, chili powder, cumin, garlic powder, onion powder, oregano, and bay leaves then stir.
- Add onions, garlic, sweet pepper, celery, and serrano pepper. Stir until blended and cook for 6 minutes.
- Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
- Add the beans and cook, stirring occasionally, for 10 minutes longer. Serve in a bowl with cheddar cheese, and Avocado Ranch if desired.
- 1/4 cup ripe avocado
- 1/4 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon buttermilk
- 1 teaspoon dried parsley
- 1 tablespoon dried dill
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons sugar
- Salt to taste
- Mash avocado or place in food processor, then stir in mayonnaise, sour cream, buttermilk. Parsley, dill, onion powder, and garlic powder & sugar. Stir or blend until evenly mixed and smooth,
- Chill until ready to serve.
