Ingredients

  • 1 tablespoon olive oil
  • 2 pounds ground turkey
  • 1/2 teaspoon of cayenne pepper
  • 4 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon oregano (fresh or dry)
  • 2 bay leaves
  • 2 cups coarsely chopped onions
  • 2 tablespoons chopped garlic
  • 1 sweet red pepper, deveined and chopped
  • 1/2 cup chopped celery
  • 1 serrano pepper finely chopped
  • 3 cups fresh diced tomatoes
  • Avocado Ranch (see recipe below)

Instructions

  1. Heat the oil in a large pot and add the ground turkey meat. Cook until lightly browned, about 5-6 minutes, stirring with a wooden spoon. Add in cayenne pepper, chili powder, cumin, garlic powder, onion powder, oregano, and bay leaves then stir.
  2. Add onions, garlic, sweet pepper, celery, and serrano pepper. Stir until blended and cook for 6 minutes.
  3. Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
  4. Add the beans and cook, stirring occasionally, for 10 minutes longer. Serve in a bowl with cheddar cheese, and Avocado Ranch if desired.
Avocado Ranch:
  • 1/4 cup ripe avocado
  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon buttermilk
  • 1 teaspoon dried parsley
  • 1 tablespoon dried dill
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 teaspoons sugar
  • Salt to taste
Instructions:
  1. Mash avocado or place in food processor, then stir in mayonnaise, sour cream, buttermilk. Parsley, dill, onion powder, and garlic powder & sugar. Stir or blend until evenly mixed and smooth,
  2. Chill until ready to serve.
