Peach Cobbler | Just Eats With Chef JJ

Instructions

Ingredients for Batter:

  • 1 cup All-Purpose Flour
  • ½ Granulated Sugar
  • ¾ Coconut Milk
  • 1 large Egg
  • ¼ tsp Salt
  • 4 8-inch mini cast iron pans

Method for Batter (Bottom Layer)

  1. In a large bowl, add the flour, sugar, 1 egg, coconut milk, and a pinch of salt, mixing with a wooden spoon, leaving it a little bit clumpy.
  2. Pour the flour mixture into the bottom of your cast-iron single-serve pans and set aside.

Ingredients for Peach Filling (Middle Layer)

  • 3-4 cups sliced Peaches (approx. 4–5 medium peaches)
  • ¼ cup granulated Sugar
  • 1 tsp Baking Powder (this helps the crust rise through the fruit)
  • 1tsp vanilla bean paste
  • ½ tsp ground cinnamon
  • 1/8 tsp ground nutmeg

Ingredients for Topping:

  • 4 tbsp Brown Sugar: (roughly 1 tablespoon sprinkled over each dish)

Method:

  1. In a large bowl, season the Peaches with nutmeg, cinnamon, and vanilla bean paste. Sugar and baking powder; mix until all ingredients are evenly distributed.
  2. Evenly scooped the Peach mixture into each individual cast-iron pan. And top with the brown. Place in the oven at 350° for 30 to 35 minutes until golden brown.
