Peach Cobbler | Just Eats With Chef JJ

Instructions
Ingredients for Batter:
- 1 cup All-Purpose Flour
- ½ Granulated Sugar
- ¾ Coconut Milk
- 1 large Egg
- ¼ tsp Salt
- 4 8-inch mini cast iron pans
Method for Batter (Bottom Layer)
- In a large bowl, add the flour, sugar, 1 egg, coconut milk, and a pinch of salt, mixing with a wooden spoon, leaving it a little bit clumpy.
- Pour the flour mixture into the bottom of your cast-iron single-serve pans and set aside.
Ingredients for Peach Filling (Middle Layer)
- 3-4 cups sliced Peaches (approx. 4–5 medium peaches)
- ¼ cup granulated Sugar
- 1 tsp Baking Powder (this helps the crust rise through the fruit)
- 1tsp vanilla bean paste
- ½ tsp ground cinnamon
- 1/8 tsp ground nutmeg
Ingredients for Topping:
- 4 tbsp Brown Sugar: (roughly 1 tablespoon sprinkled over each dish)
Method:
- In a large bowl, season the Peaches with nutmeg, cinnamon, and vanilla bean paste. Sugar and baking powder; mix until all ingredients are evenly distributed.
- Evenly scooped the Peach mixture into each individual cast-iron pan. And top with the brown. Place in the oven at 350° for 30 to 35 minutes until golden brown.
