Ingredients

  • 3 cups fresh peaches, peeled and sliced
  • 2 tablespoons cornstarch
  • Pinch nutmeg
  • 1 teaspoon cinnamon
  • 1 tablespoon maple syrup
  • ¾ cup brown sugar
  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup chopped pecans
  • 1 ½ sticks butter, cubed and room temperature

Instructions

Preheat your oven to 350 degrees. In a large mixing bowl mix the peaches, cornstarch, nutmeg, cinnamon, and maple syrup, and set aside. In another large bowl make the crumb topping. Add the brown sugar, oats, flour, and pecans together in the bowl, and mix until combined making sure there are no clumps of flour. Add the butter and using your fingertips massage the butter into the dry mixture until large crumbs are formed. The mixture should not be dry. Pour the peach mixture into an 8 or 9 inch cast iron pan. Add the crumbs on top and sprinkle gently in an even layer. Bake for 20-30 minutes until the top is golden brown and bubbly.
