Instructions

Ingredients:

  • 1–2 tablespoons olive oil
  • 1 small yellow onion, minced
  • 1 smoked turkey leg, finely diced
  • 1 can of collard greens, or you can make your own fresh collard greens
  • 1 can of yams seasoned to taste
  • Kosher salt (to taste)
  • Cracked black pepper (to taste)
  • 1 large egg white
  • 1 tablespoon water
  • 8–10 egg roll wrappers, Vegetable oil, for frying
  • Sliced scallions, for garnish

Mac and cheese already prepared (homemade, store-bought, or boxed)

Ingredients for Fresh Collard Greens

  • 1 onion diced
  • 1 bell pepper, diced
  • 3-4 cloves of garlic, minced
  • 2 tbs olive oil
  • 1/2 cup chicken stock

Method for Fresh Collard Greens:

  1. Collard greens are finely sliced and sauteed with onions, peppers, garlic, and diced turkey in olive oil in a skillet for 10-15 minutes, until tender.
  2. Make an egg wash by whisking the egg white and water in a small bowl.
  3. Once all your ingredients have cooled enough to handle, lay one egg roll wrapper on a work surface with one corner pointing toward you. Spoon about 1 tbsp of the collards and turkey mixture, 1 tbsp of the mac and cheese, and 1 tbsp of the yams into the center of one egg roll wrapper. (Don’t use more—overfilling makes them hard to roll!) Brush the outer edges of the wrapper with some egg wash. Fold the corner closest to you.

Assemble the Soul Rolls

  1. Lay an egg roll wrapper on a clean, dry surface with one corner pointing toward you (like a diamond).
  2. Place a small amount of collard greens, followed by ground chicken and a spoonful of mac and cheese, in a line near the bottom corner of the wrapper. Do not overfill.
  3. Fold the bottom corner up over the filling, tucking it in tightly.
  4. Fold in the side corners, then roll the wrapper tightly toward the top corner.
  5. Dip your finger in the beaten egg and use it to moisten the top corner of the wrapper to seal it securely.
  6. Repeat with the remaining ingredients until all the wrappers are filled.

Fry the Soul Rolls

  1. Heat 2–3 inches of frying oil in a deep skillet or pot to 350ÅãF.
  2. Carefully place 2–3 soul rolls at a time into the hot oil.
  3. Fry for 3–4 minutes, or until golden brown and crispy, turning them once to cook evenly.
  4. Remove the fried rolls and drain on a plate lined with paper towels.
  5. Let cool slightly before serving with your desired dipping sauce.
