Instructions

Ingredients

  • 1 pound ground beef
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup onions, diced
  • 1 cup bell peppers, diced
  • 2 cups tomato sauce
  • 2 tbsp tomato paste
  • 2 1/2 cups shredded cheddar cheese
  • 4 oz thin spaghetti
  • 1 large head of cabbage
  • 1 cup pepperoni slices, diced
  • 1 large egg

Method

  1. Gently remove the leaves from the head of cabbage, keeping each leaf whole, and set aside.
  2. Place a large pot of boiling water over medium-high heat. Once boiling, add the cabbage leaves, 3–4 at a time, and cook for 2–3 minutes, until wilted. Remove and let them cool.
  3. Place the ground beef in a large bowl. Season with salt and pepper, then add the diced onions, bell peppers, and pepperoni, along with the egg. Mix until fully combined.
  4. Break up 1/4 cup of the spaghetti into small pieces and add to the ground beef mixture. Mix well.
  5. Place a large skillet over medium-high heat coated with avocado oil, add the ground beef mixture into the skillet, and cook until done. Set aside. And allow to cool for 5 – 10 minutes.
  6. Mix the tomato sauce and tomato paste together in a bowl to make a thick sauce.
  7. Spread a layer of tomato sauce mixture at the bottom of a baking dish and season with salt and pepper.
  8. Preheat oven to 350ÆF. While the oven is heating, prepare the stuffed cabbage.
  9. Lay each cabbage leaf on a flat surface. Place a scoop of the seasoned beef mixture onto each leaf, sprinkle with cheddar cheese, and roll the leaf around the filling.
  10. Place each rolled stuffed cabbage, seam-side down, into the sauce in the baking dish.
  11. Once the dish is full of stuffed cabbage, pour more tomato sauce over it. Season with onion powder, garlic powder, salt, and pepper to taste. Sprinkle the entire dish with theremaining cheddar cheese.
  12. Cover the baking dish with foil and bake at 350ÆF for 30 minutes, or until the cheese is melted and bubbling.
