Teriyaki Turkey Spam & Rice

Ingredients

  • Teriyaki Turkey Spam & Rice
  • 2 pineapple, split in half lengthwise
  • 2-3 tablespoons olive oil
  • 1 red bell pepper, small dice
  • 1 yellow bell pepper, small dice
  • 1 turkey spam, large dice
  • ½ teaspoon minced ginger
  • ½ cup soy sauce
  • 2 tablespoons rice wine vinegar
  • ¼ cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 cup cooked wild rice
  • 1 cup cooked white rice
  • ¼ cup toasted sesame seeds for garnish

Instructions

1. Remove the inside of the pineapples by scoring them in the style of tic tac toe. Scoop out the fill with a spoon and set aside in a medium bowl. Heat a large wok over medium high heat with olive oil. Add the peppers and saute for 2-3 minutes until they begin to soften. Then add the spam and continue to saute until the spam turns golden in color for roughly 3-4 minutes. Add the soy sauce, rice wine vinegar, brown sugar, and honey. Bring the mixture up to a simmer. Whisk the cornstarch into a little bit of water just so it dissolves. Add it to the simmering sauce and whisk constantly until it begins to thicken which should take roughly a minute. If it’s not thick enough for your liking add some more cornstarch. Add about 2 cups of the diced pineapple you removed from the pineapple halves and mix into the teriyaki spam. Scoop the prepared wild rice and white rice on the bottom of each pineapple half. You can mix the rices together or leave them separate, up to you. Spoon the teriyaki spam and pineapple mixture over the rice. Sprinkle the stuffed pineapple halves with toasted sesame seeds and serve.
