Instructions

Ingredients

  • 2 pounds fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup chopped Vidalia onion
  • 1 tablespoon minced garlic
  • 2 cups tomatoes, peeled and chopped, juices retained
  • 1 tablespoon light brown sugar
  • ½ cup water
  • ¼ teaspoon dried Italian seasoning
  • ¼ teaspoon Creole or Cajun seasoning, or to taste
  • Kosher salt and freshly ground black pepper, to taste

Method:

  1. Trim the ends off and cut green beans into halves, cutting on the diagonal; set aside.
  2. Heat the olive oil and butter in a large skillet that fits a lid over medium-high heat.
  3. Sauté the onion until tender, add the garlic, and cook for another minute.
  4. Add the tomatoes with their juices and the brown sugar, and cook until the tomatoes are softened, about 3 to 4 minutes.
  5. Add the green beans and water, bring to a boil, reduce the heat to medium, cover, and cook for 10 to 12 minutes, or until the beans reach desired tenderness, stirring occasionally.
  6. Season with Italian seasoning, Cajun seasoning, salt, and pepper; taste and adjust. Serve immediately.
