Instructions

  • 1 lb. Turkey sausage removed from the casing.
  • 1 lb. Ground Turkey
  • 1 medium red onion, finely diced
  • 1 bell pepper, finely diced
  • 1/2 tsp Salt (to taste)
  • 1/2 tbsp onion powder,
  • 1/2 tbsp garlic powder,
  • 1/2 tsp black pepper,
  • 1/8 tsp cayenne,
  • 4 tbsp butter,
  • 1 cup cheddar cheese,
  • 1/2 cup Colby cheese,
  • 1/2 cup Monterey Jack cheese.

Method:

  1. In a large bowl, mix all the turkey meat with all the dry spices (Onion powder, Garlic powder, salt, black pepper, and cayenne pepper)
  2. Next, add the diced onions and bell peppers, then mix well. Take about a handful of the ground turkey and form a flat patty (like a hamburger), enough to match the size of an 8-inch tortilla.
  3. Heat a nonstick skillet with ó tbsp butter, then add the ground turkey to the skillet. Place one tortilla on top of the patty and allow the patty to cook for 4 minutes.
  4. Flip the patty and tortilla over and allow the tortilla to brown. Add the cheese on top of the patty and place another tortilla on top of the cheese.
  5. Add another ó tbs of butter to the pan and flip the tortilla over and allow the other tortilla (the other side to brown. Cook for 2 minutes, or until the tortilla is golden brown, then remove from the pan and serve.
