Atlanta Bourbon Hot Chicken Sandwich

Instructions

For Flour Dredge: 3 cups Flour 1 tbs Onion Powder 1 tbs Garlic Powder 1tbs Chipotle powder 1tbs smoked Paprika 1 tbs dried thyme 1 tbs dried oregano Salt to taste Pepper to taste For Chicken: 2lbs chicken breasts sliced open (4 pieces) 4 sesame seed potato buns ½ tbs Onion Powder ½ tbs Garlic Powder ½ tbs Chipotle powder ½ tbs smoked Paprika ½ tbs dried thyme ½ tbs dried oregano Salt to taste Pepper to taste 4 eggs 2 cups buttermilk 2 quarts of vegetable oil For Sauce: 1 cup of chipotle in adobe sauce 1 cup brown sugar 1 ½ cup whisky or bourbon ½ tbs onion powder ½ tbs garlic powder ½ tbs chipotle seasoning ½ tbs smoked paprika In a large bowl, mix the chipotle in adobe sauce, brown sugar, whisky or bourbon, onion powder, garlic powder, chipotle seasoning, smoked paprika and stir until ingredients are evenly mixed and brown sugar is dissolved. Pour into a saucepan and place over low – medium heat and allow to simmer for 4-5 minutes until sauce is bubbling and the consistency looks smooth. Keep on very low heat until chicken is done. Method: 1. Take a large bowl mix the flour, onion powder, garlic powder, chipotle power, smoked paprika, thyme, oregano and mix well and set aside. 2. In another bowl whisk together the eggs and butter milk and set aside. 3. Place a large cast iron skillet filled with vegetable oil over medium high heat and allow oil to get hot. 4. Next, season chicken breast with Onion Powder, Garlic Powder, Chipotle powder, smoked Paprika, dried thyme, and dried oregano, then salt and pepper taste. 5. Dip each chicken breast in the egg and buttermilk mixture, then dredge into the seasoned flour mixture. Place chicken into the hot oil and cook for 6 minutes on each side until golden brown. Remove from oil and place on a baking sheet with a wire rack so excess oil can drip off. 6. Lay the chicken in a large bowl or pan and pour the chipotle sauce over the chicken, making sure all the chicken is coated. 7. Lay chicken on the bottom side of the sesame seed bun, add extra sauce, add pickles, place top of bun over the chicken and serve.
