Fried Halibut Fingers

Ingredients

  • 1 pound Halibut fillets cut into strips
  • 3 eggs
  • 2 cups of milk
  • 2 tbs Garlic Powder
  • 2 tbs Onion Powder
  • 2 cups All-purpose flour
  • 2 tbs Smoked paprika
  • 2 tbs Cajun Seasoning
  • 4 cup Vegetable Oil
  • Salt (to taste)
  • Pepper (to taste)

Instructions

1. In a large bowl whisk the egg and milk together and set aside. Next Season the flour with half of the garlic powder, onion powder, smoked paprika and Cajun seasoning. (Reserving the remainder to season the fish) Mix the flour and spices together making sure evenly blended. 2. Season the halibut strips with the garlic powder, onion Powder, smoked paprika, and Cajun seasoning. 3. Dip the fish strips into the egg milk mixture, then dip them into flour mixture. Dip them back into the egg mixture, then a final dip it into the bed crumbs, lay them out on a sheet pan or a plate until oil gets hot enough for you to fry the fish. 4. Place a skillet with vegetable oil over medium high heat, once oil is hot, place the fish in and cook for 5-7 minutes until golden brown. Remove from the oil and lay on a sheet pan with a rack to drain excess oil serve along with fries and dipping sauce. For Seafood Dipping Sauce 1 cup of Mayonnaise ½ cup Ketchup ½ cup Hot Sauce Salt (to taste) Pepper (to taste) 1. Place all ingredient in a bowl, mix until everything is smooth and evenly incorporated. Set aside in the refrigerator until ready to serve.
