Gourmet Pastrami and Corn Beef Reuben Sandwich

Instructions

Ingredients:

  • 8 slices of marble rye bread
  • 1-2 tablespoons of Olive oil
  • 1 pound of thinly sliced corned beef
  • 1 pound of thinly sliced pastrami
  • 1 cup of sauerkraut, drained
  • 8 slices of Swiss cheese

Ingredients for Butter Spread:

  • 4 tablespoons of unsalted butter, softened
  • 1 tablespoon of whole grain mustard
  • 1 teaspoon of caraway seeds
  • Salt and pepper to taste

Ingredients for Homemade Thousand Island Dressing:

  • 1 cup of mayonnaise
  • 2 tablespoons of relish
  • 2 teaspoons of sugar
  • 2 tablespoons of ketchup
  • 1 tablespoon of vinegar
  • ½ teaspoon of caraway seeds
  • Salt to taste

Method:

  1. Butter blend and Thousand Island dressing
  2. In a small bowl mix all the ingredients for the butter spread and mix until smooth and evenly blended and set aside.
  3. In a separate bowl, mix all the ingredients for the thousand island dressing in a bowl and mix until all ingredients are evenly blended and set aside.
  4. Preheat a skillet or griddle over medium high heat. Spread a thin layer of the butter mixture on one side of each piece of bread, Spread thousand island dressing on the other side of the bread. Lay the bread on the skillet, butter side down and to begin toasting the bread. Allow to toast for 2 minutes until bread is toasted to your liking. While the bread is toasting, lightly drizzle olive oil on the other side of the grill and place the pastrami and corn beef on the skillet to get it hot. Remove bread from the skillet and place on a plate and begin to build the sandwich.
  5. Lay hot pastrami and hot corn beef on the bread, followed by 2 slices of cheese, sauerkraut, thousand island dressing, another layer of the pastrami and corn beef, place bread on top to finish and close the sandwich and serve.
