Honey Lemon Pepper Hot Fish

Instructions

Ingredients: 2 lbs. catfish 3 Eggs 2 cups of milk 1 cup hot sauce ½ tbs Cajun seasoning ½ lemon 8 slices White bread 1 cup of bread and butter pickles 1 small onion sliced 1 medium sliced tomato For Seasoned Cornmeal: 3 cups Yellow Cornmeal 1 tbs smoked paprika 1 tbs Cajun seasoning 1 tbs lemon pepper 1 tbs garlic powder 1 tbs onion powder For Seasoning Blend for Fish: ½ tbs smoked paprika ½ tbs Cajun seasoning ½ tbs lemon pepper ½ tbs garlic powder ½ tbs onion powder For Honey Lemon Hot Sauce: ½ tbs smoked paprika ½ tbs Cajun seasoning ½ tbs lemon pepper ½ tbs garlic powder ½ tbs onion powder 1 cup hot sauce ½ lemon juiced 2 tbs of honey Mix the seasoning blend for the fish, which is smoked paprika, Cajun seasoning, lemon pepper, garlic powder, and onion powder in small bowl, and mix until all ingredients are evenly mixed. Mix in 1 cup of hot sauce, squeeze the juice of ½ lemon into the sauce, and honey and mix well, and set aside. Method: 1. In a medium sized bowl mix the corn meal with the smoked paprika, Cajun seasoning, lemon pepper, garlic powder, and onion powder, and mix until all ingredients are evenly mixed and set aside. 2. Mix the seasoning blend for the fish, which is smoked paprika, Cajun seasoning, lemon pepper, garlic powder, and onion powder in small bowl, and mix until all ingredients are evenly mixed. Next, Season each piece of catfish on both sides with the seasoning blend. 3. In another bowl create the egg mixture, first whisk the eggs, milk, and hot sauce together, add Cajun seasoning, and the juice of a lemon, mix well. 4. Dip each piece of fish into the egg mixture then dredges it into the seasoned corn meal Place in a hot skillet filled with cooking oil and cook for 4 minutes on each side, until golden brown. 5. Place fish on one slice of white bread, drizzle with hot sauce, place on the bread and butter pickles, sliced onions, tomato slices, place second piece of bread on top and serve, along with potato chips.
