Mami’s Carne con Papa

Ingredients

  • 1.5 lbs top sirloin, cut into 1-inch cubes
  • 4 medium potatoes, (skin on and cubed, med)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1⁄4 cup tomato paste
  • 1 cup beef broth
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Chopped fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides, about 5 minutes. Remove the beef from the pot and set aside.
  2.  In the same pot, add the chopped onions, garlic, and bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in the diced tomatoes, tomato paste, beef broth, cumin, oregano, smoked paprika, salt, and pepper. Bring to a simmer.
  4. Return the browned beef to the pot. Cover and simmer over low heat for 1.5 to 2 hours, or until the beef is tender.
  5. Add the diced potatoes to the pot and continue to simmer, uncovered, until the potatoes are tender, and the sauce has thickened, about 30 minutes.
  6. Adjust seasoning with salt and pepper if needed. Garnish with chopped cilantro or parsley before serving.
  7. Serve the carne con papa hot with Jasmine rice.
