Ingredients
- 1.5 lbs top sirloin, cut into 1-inch cubes
- 4 medium potatoes, (skin on and cubed, med)
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1⁄4 cup tomato paste
- 1 cup beef broth
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Chopped fresh cilantro or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides, about 5 minutes. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onions, garlic, and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the diced tomatoes, tomato paste, beef broth, cumin, oregano, smoked paprika, salt, and pepper. Bring to a simmer.
- Return the browned beef to the pot. Cover and simmer over low heat for 1.5 to 2 hours, or until the beef is tender.
- Add the diced potatoes to the pot and continue to simmer, uncovered, until the potatoes are tender, and the sauce has thickened, about 30 minutes.
- Adjust seasoning with salt and pepper if needed. Garnish with chopped cilantro or parsley before serving.
- Serve the carne con papa hot with Jasmine rice.
