Mixed Greens with Champagne Vinegar Dressing Recipe
A salad that can accompany Chef Jernard’s shrimp scampi or any main entree.
Ingredients
- 1/2 cup champagne vinegar
- 1 cup olive oil
- ½ lemon, juiced
- 1 cup grape tomatoes, halved
- 3-4 cups spinach and arugula blend
- Feta for crumbling
Instructions
In a large bowl, combine the vinegar, oil, lemon, and salt together whisking until the dressing is emulsified. Add in the tomatoes. In another large bowl toss the salad together with as much dressing as desired. Do not overdress or else it will become too soggy. Top the salad with feta and serve.
