Seared Blackened Salmon with Parmesan Mushroom & Spinach Risotto

Ingredients

  • 3 tbs of olive oil
  • 4 salmon filets
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and pepper to create the blackening seasoning.
  2. Pat the salmon filets dry with paper towels and generously coat both sides with the blackening seasoning mixture.
  3. Heat olive oil in a skillet over medium-high heat. Once hot, add the salmon filets to the skillet and cook for about 3-4 minutes on each side, or until the salmon is blackened on the outside and cooked through in the center. Remove from heat and set aside.
