Texas Caviar Salad | New Soul Kitchen

Ingredients
- 4 cups of black eye peas
- 2 large ears of corn and corn cut off the cobb
- 1 jalapeno pepper diced
- 1 medium red bell pepper diced
- 1 medium green bell pepper diced
- 1 medium red onion diced
- 3 medium tomatoes
- 2 Tbs cilantro chopped
- 2 limes
- 2 Tbs of Agave
- 2 Tbs Apple Cider Vinegar
- Kosher salt to taste
- Black pepper to taste
Instructions
1. In a large bowl, mix together the corn, diced jalapeno, diced red and green peppers, onions, tomatoes, cilantro, agave, apple cider vinegar and the juice of 1 lime and mix well. 2. Next fold in the black eye peas, salt and pepper and gently mix. Once all vegetables are mixed, squeeze the juice of another lime on top, give it another gentle mix and place in the refrigerator until ready to serve.
