‘Basketball Wives’ star Kristen Scott joins Chef JJ to prepare a creamy dish that has a dash of spicy and a ton of lobster and flavor – need we say more?
½ medium white onion, small diced
1 shallot, thinly sliced
1 jalapeno, small dice
2 teaspoons garlic powder
4 cups corn
1 (13.5 oz) can unsweetened coconut milk
4 lobster tails, large dice
Cracked black pepper
In a large saute pan over medium-high heat add grapeseed oil until hot. Add the onion, shallot, scallions, jalapeno, and sweat until the onions are translucent.
Add garlic powder and mix into the aromatics toasting slightly. Add the corn to the pan and mix to combine into the aromatics. You can use frozen corn or fresh corn cut off the cob. Season the corn mixture with salt and pepper and adjust seasoning as needed.
Add coconut milk, turn up the heat, cover and bring mixture to a low simmer. Adjust the heat if it begins to boil.
After the mixture comes up to a simmer add the juice and zest of one lime.
At the very end add the lobster and mix into the corn mixture and warm through.
Serve with more lobster on top if desired.
