Herb Roasted Baby Potatoes recipe, Just Eats with Chef JJ ep. 529

Ingredients

  • 1⁄2 pound small red-skinned potatoes (about 13⁄4-inch in diameter), scrubbed
  • 1⁄2 pound small white-skinned potatoes (about 13⁄4-inch in diameter),), scrubbed
  • 3 cloves garlic
  • 1⁄4 cup extra-virgin olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons rough chopped mixed herbs (rosemary/sage/thyme)
  • 2 teaspoons rough chopped parsley

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place the potatoes, garlic and olive oil in a large bowl, and toss to mix well. Season with salt and pepper and lay on a parchment lined sheet pan. Place the sheet pan in the oven and roast for one hour.
  3. Toss the potatoes every 20 minutes or so until the potatoes are well caramelized. Once roasted, sprinkle the mixed herbs and parsley over the potatoes and toss to coat.
  4. Serve with the Pork Chops and Collard Greens.
