Herb Roasted Baby Potatoes | Just Eats with Chef JJ
Ingredients
- 1⁄2 pound small red-skinned potatoes (about 13⁄4-inch in diameter), scrubbed
- 1⁄2 pound small white-skinned potatoes (about 13⁄4-inch in diameter),), scrubbed
- 3 cloves garlic
- 1⁄4 cup extra-virgin olive oil
- Salt and black pepper, to taste
- 2 tablespoons rough chopped mixed herbs (rosemary/sage/thyme)
- 2 teaspoons rough chopped parsley
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Place the potatoes, garlic and olive oil in a large bowl, and toss to mix well. Season with salt and pepper and lay on a parchment lined sheet pan. Place the sheet pan in the oven and roast for one hour.
- Toss the potatoes every 20 minutes or so until the potatoes are well caramelized. Once roasted, sprinkle the mixed herbs and parsley over the potatoes and toss to coat.
- Serve with the Pork Chops and Collard Greens.
