Garlic Panko Crusted Rack of Lamb

Ingredients
- 1 American rack of lamb
- 6-10 garlic cloves
- 2 shallots, roughly chopped
- 2 tablespoons smoked paprika
- 1 tablespoon Aleppo pepper
- 1/4 cup sunflower seeds
- 1 cup Japanese panko breadcrumbs
- Kosher salt
- Fresh cracked black pepper
- Grapeseed oil
Instructions
- Preheat the oven to 400 degrees.
- In a small food processor mix together the garlic, shallots, smoked paprika, Aleppopepper, sunflower seeds, and panko breadcrumbs. Blend until the garlic is coarsely ground and the mixture binds together.
- Season the lamb with salt, pepper, and grapeseed oil.
- Pack the breadcrumb mixture on top of the lamb and roast on a medium tray or in a cast iron pan for 15 to 25 minutes or until a thermometer inserted in the rack on an angle registers medium (130- 135 degrees) or medium well (140-145 degrees).
