Just Eats with Chef JJ

Ingredients

  • 1 American rack of lamb
  • 6-10 garlic cloves
  • 2 shallots, roughly chopped
  • 2 tablespoons smoked paprika
  • 1 tablespoon Aleppo pepper
  • 1/4 cup sunflower seeds
  • 1 cup Japanese panko breadcrumbs
  • Kosher salt
  • Fresh cracked black pepper
  • Grapeseed oil

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a small food processor mix together the garlic, shallots, smoked paprika, Aleppopepper, sunflower seeds, and panko breadcrumbs. Blend until the garlic is coarsely ground and the mixture binds together.
  3. Season the lamb with salt, pepper, and grapeseed oil.
  4. Pack the breadcrumb mixture on top of the lamb and roast on a medium tray or in a cast iron pan for 15 to 25 minutes or until a thermometer inserted in the rack on an angle registers medium (130- 135 degrees) or medium well (140-145 degrees).
