Ingredients

  • 12 chicken legs/ drums

  • INGREDIENTS FOR THE RUB
  • Olive oil
  • ¼ cup + 2 tablespoons brown sugar
  • 2 ½ tablespoons Chipotle in Adobo Sauce
  • 2 ½ tablespoons Worcestershire Sauce
  • 3-4 tablespoons whiskey
  • 3 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 teaspoons dried oregano
  • 2 ½ tablespoons smoked paprika
  • Kosher salt
  • Black pepper

  • INGREDIENTS FOR WHISKEY CHIPOTLE SAUCE
  • 3 tablespoons butter
  • 1 cup Chipotle in Adobo Sauce
  • ¾-1 cup whiskey
  • 3-4 tablespoons Worcestershire Sauce
  • 1/4 cup brown sugar
  • 1 ¼ teaspoon onion powder
  • 1 ¼ teaspoon garlic powder
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Using a sharp knife, cut and remove the skin that covers the bone of each chicken leg to shape them like a lollipop.
  3. In a medium bowl mix brown sugar, chipotle in adobo, Worcestershire sauce, whiskey, garlic powder, onion powder, oregano, smoked paprika, salt, and pepper. Then dip each chicken leg into the sauce mixture and coat evenly.
  4. Place each chicken lollipop into a muffin tin with their legs standing up-right. Wrap aluminum foil around the end of each leg to keep them from turning too dark in the oven.
  5. Place the chicken legs into the oven and roast for about 40 minutes or until they are fully cooked and the temperature is 165 degrees.
  6. In a medium saucepan over medium-high heat mix together butter, chipotle in adobo, whiskey, Worcestershire sauce, brown sugar, onion powder, garlic powder, pepper, and salt to taste.
  7. Simmer for about 10 minutes.
  8. Once the chicken legs have cooked dip them in the Whiskey Chipotle Sauce and serve.
