Caribbean Coconut Rice

Coconut rice with a Caribbean flair.
Ingredients
- Caribbean Coconut Rice Ingredients
- 2 tablespoons olive oil
- ½ red bell pepper, diced
- ¼ cup diced spring onion
- ½ cup diced white onion
- 2 cloves garlic, minced
- 1 cup coconut milk
- ⅛ teaspoon crushed red pepper flakes
- 2 teaspoons dried parsley
- 1 ½ teaspoons salt and more as needed
- 1 ½ cups uncooked long- grain white rice
- 1 cup water
- 3 tablespoons sweetened coconut flakes
- Plus 1 tablespoon toasted for garnish optional
- ½ bunch fresh parsley, for garnish
Instructions
For the Pressure Cooker Heat the oil in the stovetop pressure cooker over high heat or use the suate setting for the electric pressure cooker. Saute the bell pepper, spring onion, white onion and garlic until fragrant, about 3 minutes. Stir in the coconut milk and red pepper flakes and lower the heat to low medium for the stovetop pressure cooker or cancel cooking for the electric pressure cooker. Add the parsley and season with salt. Add the rice and water and sprinkle in the coconut flakes. Close the lid.
