Peri Peri Chicken Skewer | New Soul Kitchen

Ingredients
- 8 wooden skewers soaked in water
- 1 lb. sliced chicken breast
- 1 lemon juiced
- 1 lime juiced
- ½ tbs crushed red pepper flakes
- ½ tbs smoked paprika
- ½ tbs honey
- 1 tbs minced garlic
- ½ tbs palm sugar
- ½ tsp black pepper
- ½ tsp kosher salt
- ½ cup grape seed oil (for the sauce)
- 1 tbs grape seed oil (for coating the grill pan)
Instructions
1. Add the following ingredients to a large bowl, lemon juice, lime juice, crushed red pepper flakes, smoked paprika, honey, minced garlic, palm sugar, salt, pepper, and grape seed oil and mix well. (remove 3 tbs of the sauce and set aside for dipping when skewers are done) 2. Place chicken into the bowl and make sure all pieces are coated with the sauce. Take each strip of chicken and fold it onto the skewer and set aside. 3. Place a grill pan over medium high heat and coat with grape seed oil, once pan is hot lay the chicken skewers on the grill pan and cook for 2-3 minutes on each side. After chicken is done and juices are clear remove from pan and serve.
